1 medium onion, finely chopped
2 tablespoons olive oil
8 garlic cloves, minced
2 cups ketchup
1 cup cider vinegar
1 cup coffee blossom honey
1/2 cup soy sauce
1/2 cup medium or dark roast coffee (my picks: Espresso or Morando)
1/4 teaspoon salt
1/4 teaspoon pepper
In a large saucepan, add the onion and sauté until tender. Add the garlic and cook 2 minutes longer. Stir in the remaining ingredients and bring to a boil. Reduce the heat and let simmer, uncovered, for 35 - 45 minutes (or until desired consistency), stirring occasionally. Let it cool. Puree in a blender or food processor until smooth. Enjoy!

Coffee is actually a versatile ingredient - not only pairing well with sweets but also adding a depth of flavor to savory dishes as well.
Okay, who's ready to start grilling now?
